Prater and Sheri Noble have opened the Bamboo Bistro in Siesta Key Village with a mission to share their passion for healthy and tasty paninis, breakfast dishes, smoothies, and house-made baked goods with their customers in a friendly, casual cafe.
Gourmet Sweet Tart frozen soft yogurt is another of their specialties and it is used to create a wide range of smoothies and topping (raspberries, Grapenuts, dates, coconut, grapes, granola, and caramel are only a few among more than three dozen).
Open from 9 a.m. to 5 p.m. Monday-Saturday with Sunday hours from 8 a.m. to 3 p.m., Bamboo Bistro also offers hand-squeezed fruit and vegetable juices, gourmet coffee and tea, “gourmet Italian Sipping Chocolate” and made-from-scratch desserts. Blueberry walnut scones flew out the door on recent a weekday, but pineapple coconut danish, ginger, and peach coffee cake, cherry tart, and chess pie were still available.

Hot grilled paninis (Blazing Buffalo, Chicken Honey, Hearty Roast Beef, Slammin’ Italian and Turkey Lurky) among them), wraps and croissants star at lunchtime with fillings as continental as a Caprese or as homey as PB and J. Daily specials supplement the regular menu.
Salads can be “built to order” with three veggies, one meat and one cheese for $6.95, and the fresh fruit salad (pineapple, strawberries, banana, apple, blueberries, and sliced almonds in hand-squeezed orange juice) is a no-added-sugar favorite.
Personalized catering and picnic baskets also are available.
The couple aims to provide the kind of personal service only possible at a family-run establishment. Health and freshness are their watchwords, Prater says. Eager to meet the locals, Bamboo is offering several first-time customer specials and is family-friendly.
